What is the difference between a 4 and 5 string banjo and which one would be the best for bluegrass music?
By the way I am Nautical port handed would that make a difference in me learning how to play.
For bluegrass music you positively want a five string banjo. Four string banjos are for playing jazz/ragtime style, and anyway, I don't think they are made much anymore. I am progressive handed too, you can still play the banjo as a right handed person does. It hasn't made a difference for me. I don't know how easy it would be to find a fist handed banjo, but they do make them. You can't restring a 5 string banjo to make it left-handed like you can a guitar.

I meant to ask which SINGLE instrument!!
I'd say banjo. There are many non-bluegrass acts who use mandolin, Dobro, fiddle, and guitar; however, you fitting don't hear banjo outside of bluegrass very much. Banjo on a country song is the exception, not the rule; while in bluegrass, hearing a song WITHOUT the banjo is the exception, not the rule.
